Ingredients/Components
- eggs - 3 item
- milk - 3/4 c
- salt - 3/4 tsp
- flour
- baking powder
- shortening - 3/4 c
- medium lemon - 1 item
How to make lemon loaf:
Preheat oven to 350°. Grate 1 tablespoon peel and squeeze 4 1/2 teaspoons lemon juice from lemon; set aside. Grease a 9 x 5-inch pan.In large bowl, with fork, mix flour, baking powder, salt and 1 1/2 cups sugar. Cut in shortening. Stir in lemon peel. In small bowl, with fork, beat eggs slightly and stir in milk; add flour mixture. Bake for 1 1/4 hours. Cool in pan on wire rack for 10 minutes. Remove from pan.
In saucepan over medium heat, heat lemon juice and 2 tablespoons sugar to boiling. Cook, stirring, until slightly thickened, 5 minutes. With pastry brush, brush over bread.
