Blueberry nut bread
Ingredients/Components
- milk - 2 c
- vanilla extract - 2 tsp
- salt - 1 tsp
- margarine or butter - 3/4 c
- baking powder - 2 Tbsp
- all-purpose flour - 5 c
- large eggs - 4 item
- walnuts, chopped - 1/2 c
- blueberries
- ground cinnamon sugar - 1 tsp
How to make blueberry nut bread:
About 4 hours before serving or day ahead: Preheat oven to 350°. Grease and flour 10-inch Bundt pan.In small bowl, combine walnuts, cinnamon and 1/2 cup sugar. In a large bowl, mix flour, baking powder, salt and 1/2 cup sugar. Cut in margarine or butter until mixture resembles fine crumbs. In another bowl, beat eggs. Beat in milk and vanilla extract until mixed, then stir into flour mixture just until flour is moistened. Gently stir in blueberries. Spread 1/3 of batter into pan; sprinkle with 1/2 of the nut mixture. Repeat with other half of remaining batter, then remaining nut mixture. Top with remaining batter. Bake 1 hour and 10 minutes or until toothpick inserted in center of bread comes out clean.
