Carrot bread
Ingredients/Components
- sugar
- cinnamon - 2 tsp
- eggs - 3 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- flaked coconut - 1/2 c
- baking powder - 2 tsp
- all-purpose flour - 2 c
- raisins - 1/2 c
- salad oil - 1 c
- finely grated carrots - 2 c
How to make carrot bread:
Combine flour, baking powder, cinnamon, salt and sugar in mixing bowl. Add salad oil, vanilla, carrots and eggs. Mix until well blended. Fold in raisins, coconut and nuts. Pour into a greased 9 x 5 x 3-inch loaf pan. Bake at 350° for 1 hour and 15 minutes. Turn out of pan and cool on rack. Do not slice until bread has cooled completely.
