Ingredients/Components

  • salt
  • chopped celery - 1/2 c
  • chili powder - 1 tsp
  • can chicken broth - 1 1/2
  • bay leaf - 1 item
  • chopped green pepper - 1/2 c
  • oregano - 1/2 tsp
  • olive oil
  • chopped parsley - 1/3 c
  • cayenne - 1/4 tsp
  • cloves garlic, crushed - 2 item
  • black pepper - 1/4 tsp
  • can tomatoes - 1 oz
  • thyme - 1/2 tsp
  • uncooked rice - 1 c
  • smoked sausage - 1/2 lb
  • medium shrimp, shelled and deveined

How to make jambalaya:

Cook sausage in Dutch oven until browned. Remove; drain. Add oil to drippings in Dutch oven. Add celery, green pepper, parsley and garlic; saute until tender, about 5 minutes. Add tomatoes, broth and onions. Stir in seasonings and bay leaf. Add rice and sausage; mix well. Bring to boil, reduce flame to low, cover and simmer 30 minutes, stirring occasionally. Turn off flame, add shrimp and turn mixture into 2 1/2-quart casserole. Bake uncovered at 350° for 25 minutes until shrimp are pink. Remove bay leaf; discard.
