Jambalaya
Ingredients/Components
- salt
- chopped celery - 1/2 c
- chili powder - 1 tsp
- can chicken broth - 1 1/2
- bay leaf - 1 item
- chopped green pepper - 1/2 c
- oregano - 1/2 tsp
- olive oil
- chopped parsley - 1/3 c
- cayenne - 1/4 tsp
- cloves garlic, crushed - 2 item
- black pepper - 1/4 tsp
- can tomatoes - 1 oz
- thyme - 1/2 tsp
- uncooked rice - 1 c
- smoked sausage - 1/2 lb
- medium shrimp, shelled and deveined
How to make jambalaya:
Cook sausage in Dutch oven until browned. Remove; drain. Add oil to drippings in Dutch oven. Add celery, green pepper, parsley and garlic; saute until tender, about 5 minutes. Add tomatoes, broth and onions. Stir in seasonings and bay leaf. Add rice and sausage; mix well. Bring to boil, reduce flame to low, cover and simmer 30 minutes, stirring occasionally. Turn off flame, add shrimp and turn mixture into 2 1/2-quart casserole. Bake uncovered at 350° for 25 minutes until shrimp are pink. Remove bay leaf; discard.Recipe categories: Poultry, Meat, Cajun.
