Spanish rice
Ingredients/Components
- sugar - 1 tsp
- salt - 2 tsp
- vegetable oil - 1/4 c
- chopped celery - 1/2 c
- chili powder - 1 Tbsp
- bay leaf - 1 item
- chopped green pepper - 3/4 c
- ground beef
- can tomato paste - 1 oz
- cloves garlic, crushed - 2 item
- can tomatoes - 1 oz
- uncooked regular rice
- dash of red pepper - 1 item
- can beef broth undiluted - 1 oz
How to make spanish rice:
Cook garlic and celery in hot oil in a large kettle until tender. Drain tomatoes, reserving juice. Add enough hot water to tomato juice to equal 2 cups. Combine tomatoes, tomato juice, tomato paste, rice, salt, bay leaf and red pepper. Add to garlic and celery mixture; stir well. Bring to a boil. Reduce heat and simmer, covered, for 10 minutes. Remove bay leaf. Cook ground beef and green pepper until beef is browned; drain. Stir in chili powder, sugar and beef broth. Combine rice and meat mixture. Place in a 13 x 9 x 2-inch baking dish. Bake at 350° for 35 minutes. Yields 8 to 10 servings.Recipe categories: Low protein, Low fat, Side dish.
