Hummingbird cake
Ingredients/Components
- all-purpose flour - 3 c
- baking soda - 1 tsp
- salt - 1/2 tsp
- sugar - 2 c
- ground cinnamon - 1 tsp
- eggs, beaten - 3 item
- vegetable oil - 3/4 c
- vanilla
- can crushed pineapple undrained - 1 oz
- chopped pecans - 1 c
- mashed ripe bananas
- Cream Cheese Frosting - 1 item
- Do not beat
- pkg - 1 oz
How to make hummingbird cake:
Combine first 5 ingredients in a large bowl; add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup pecans and bananas. Pour batter into 3 greased and floured 9-inch round cake pans. Bake at 350° for 23 to 28 minutes or until wooden pick comes out clean. Cool in pans 10 minutes; remove from pans to wire rack and cool completely. Frost with Cream Cheese Frosting.Cream Cheese Frosting:1/2 c. butter or margarine, softened1 (8 oz.) pkg. cream cheese, softened1 (16 oz.) pkg. 10x powdered sugar1 tsp. vanilla Cream butter and cream cheese.
