Ingredients/Components
- sugar - 1 c
- butter - 1/2 lb
- vanilla flavoring - 1 tsp
- baking powder
- all-purpose flour - 2 c
- pecans - 5 c
- lemon flavoring - 1 tsp
- box raisins - 1 item
- eggs 6 if small - 5 item
- pineapple mixed colors - 1 lb
- cherries mixed colors - 1 lb
How to make fruit cake:
Roll fruit and nuts in one cup flour. Use other cup in batter.Batter: Cream sugar and butter. Add eggs and mix well. Add flour with baking powder to mixture, then add flavors, fruit and nuts. Bake in tube pan for 2 hours at 325°. Place pan of water on the rack under cake. Cool 30 minutes before taking out of pan. Grease pan good. Also line pan with brown paper.
