Hawaiian kabobs
Ingredients/Components
- brown sugar - 1 Tbsp
- vegetable oil - 1/4 c
- ground ginger - 2 tsp
- dry mustard - 1 tsp
- garlic powder - 1 tsp
- soy sauce - 1/2 c
- ground pepper - 1/4 tsp
- pineapple juice - 1/2 c
- can pineapple chunks, drained - 1 1/4
- large green pepper, cut into 1-inch pieces - 1 item
- carton fresh mushrooms - 1 item
- onion chunks - 1 item
- boneless chicken breasts, cut into 1-inch cubes
How to make hawaiian kabobs:
Combine first 8 ingredients in a saucepan. Bring to a boil. Reduce heat and simmer 5 minutes. Let cool. Pour mixture into shallow dish. Add chicken, tossing gently to coat. Cover and marinate at least 1 hour in the refrigerator, stirring mixture occasionally.Remove chicken from marinade, reserving marinade. Alternate chicken, pineapple, green pepper, mushrooms and onions on 12-inch skewers. Grill over hot coals 20 minutes or until done, turning and basting frequently with marinade. Serve over cooked rice.
