Harvard beets



  • sugar - 1/3 c
  • salt - 1/2 tsp
  • cornstarch - 2 Tbsp
  • vinegar - 1/4 c
  • dash of pepper - 1 item
  • can diced or small whole beets - 1 item
  • beet liquid plus water - 1 c

How to make harvard beets:

Combine sugar, cornstarch, salt and pepper in a 1-quart casserole. Stir in vinegar and beet liquid. Add beets. Cover. Microwave on High 4 to 5 minutes until slightly thickened. Let stand 3 minutes before serving.
