Ingredients/Components

  • sugar - 1 Tbsp
  • salt - 3/4 tsp
  • cornstarch - 1 Tbsp
  • vinegar - 1/4 c
  • dash of pepper - 1 item
  • beet juice - 2/3 c

How to make harvard beets:

Cook fresh beets and cut into slices (can use 1 one-pound can beets). In small saucepan, stir together cornstarch, sugar, salt and pepper. gradually stir in beet juice (may have to add water to make 2/3 cup) and vinegar. Cook, stirring constantly until mixture thickens and boils. Boil and stir 1 minute. Stir in beets and heat through.
