Pickled okra
Ingredients/Components
- plus 2 Tbsp - 1/4 c
- mustard seed - 1 Tbsp
- cloves garlic, peeled - 5 item
- small okra pods - 2 lb
- white vinegar 5% acidity - 4 c
- small fresh hot peppers - 5 item
How to make pickled okra:
Rinse okra, drain well and pat dry. Pack okra tightly into hot jars, filling to 1/2 in from top. Place 1 hot pepper and 1 clove garlic in each jar.Combine vinegar, salt and mustard seed in saucepan. Bring to boil, stirring until salt dissolves. Cover okra with boiling mixture. Remove air bubbles and wipe jar rims. Add tops and process in boiling bath 10 minutes. Yield: 5 pints.
