Ingredients/Components

  • sugar - 1 c
  • cinnamon - 1 tsp
  • eggs - 4 item
  • salt - 1/4 tsp
  • butter - 1/2 c
  • baking powder - 3 tsp
  • all-purpose flour - 3 3
  • pecans - 1 qt
  • cloves - 1/2 tsp
  • allspice - 1 tsp
  • box raisins - 1 item
  • walnuts - 1 qt
  • candied cherries - 1 lb
  • candied pineapple - 1 lb
  • grape juice - 1/2 c
  • box mincemeat - 1 item
  • pure cane syrup - 1 c

How to make fruit cake:

Sift together dry ingredients and spices. Add nuts, candied fruit, raisins and mincemeat. Mix until well coated with dry ingredients.

Cream the butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add cane syrup and grape juice. Add butter mixture to fruit mixture and mix well. Pour into tube pan and decorate with whole pecans. Bake at 300° until toothpick comes out clean, about 1 1/2 to 2 hours. Sometimes I use foil cupcake holders and bake for 25 to 30 minutes.
