  • butter - 1 c
  • granulated sugar - 2 c
  • eggs - 4 item
  • all-purpose flour - 3 c
  • baking powder - 3 Tbsp
  • milk - 1 c
  • cinnamon - 1 tsp
  • allspice - 1 tsp
  • cloves - 1/2 tsp
  • vanilla - 1 tsp
  • raisins, dredged in 1/4 c - 3/4 c
  • sugar
  • cornstarch - 3 Tbsp
  • salt - 1/2 tsp
  • fresh grated coconut - 3 c
  • water and coconut milk
  • raisins - 1/2 c
  • lemon juice - 1/4 c
  • grated lemon rind - 1 Tbsp
  • pecans - 1/2 c

How to make japanese fruit cake:

Filling:2 c. sugar3 Tbsp. cornstarch1/2 tsp. salt3 c. fresh grated coconut1 1/2 c. water and coconut milk1/2 c. raisins1/4 c. lemon juice1 Tbsp. grated lemon rind1/2 c. pecans Cream butter and sugar. Add eggs to this mixture one at a time. Sift baking powder and flour. Alternating with milk, add flour to butter, sugar and egg mixture. Add vanilla. Beat well. Add raisins that were dredged in flour to half of cake mixture. Add cinnamon, allspice and cloves to this same mixture. Divide this spice mixture into two cake pans. Pour remaining plain cake mixture into two more cake pans. Bake all 4 layers in 350° oven for 25 to 30 minutes.

Combine all ingredients for filling into boiler. Cook until thick. Spread on and between layers.
