Fancy egg scramble
Ingredients/Components
- milk - 2 c
- salt - 1/2 tsp
- flour - 2 Tbsp
- margarine - 3 Tbsp
- beaten eggs - 12 item
- paprika - 1/4 tsp
- pepper - 1/4 tsp
- 4 oz - 1 c
- green onions - 1/4 c
- mushroom pieces - 3 oz
- recipe Cheese Sauce follows - 1 item
- soft bread crumbs 3 slices
How to make fancy egg scramble:
Cheese Sauce:2 Tbsp. margarine2 Tbsp. flour1/2 tsp. salt1/4 tsp. pepper2 c. milk1 c. (4 oz.) American cheese Cheese Sauce: Melt margarine. Blend in flour, salt and pepper. Add milk; stir until bubbly. Add American cheese and stir until melted.In skillet, cook ham and onions in 3 tablespoons margarine until tender, not brown. Add eggs and scramble until set. Fold mushrooms and egg mixture into Cheese Sauce. Turn into 12 x 7 x 3-inch pan. Combine 4 teaspoons melted margarine, bread crumbs and paprika. Sprinkle over eggs.
Bake, uncovered, at 350° for 30 minutes. Can be made night before and refrigerated. Serves 10.
