Fancy egg scramble
Ingredients/Components
- milk - 2 c
- salt - 1/2 tsp
- flour - 2 Tbsp
- 8 oz - 1 c
- beaten eggs - 12 item
- paprika - 1/8 tsp
- pepper - 1/8 tsp
- chopped green onion - 1/4 c
- can mushroom stems and pieces, drained - 1 oz
- Add eggs and scramble just until set
- recipe Cheese Sauce recipe follows - 1 item
- soft bread crumbs 3 slices
- diced Canadian bacon or 1/2 small roll sausage 4 to 8 oz - 1 c
- butter or margarine divided use - 7 Tbsp
How to make fancy egg scramble:
In large skillet, cook bacon or sausage and onion in 3 tablespoons butter or margarine until onion is tender, but not brown. Add eggs and scramble just until set. Fold mushrooms and cooked eggs into Cheese Sauce. Turn into a 12 x 7 x 2-inch baking dish. Combine remaining melted butter, crumbs and paprika; sprinkle atop eggs. Cover; chill until 30 minutes before serving (can refrigerate overnight). Bake, uncovered in a 350° oven for 30 minutes. Makes 10 servings.Cheese Sauce:2 Tbsp. butter or margarine2 Tbsp. flour1/2 tsp. salt1/8 tsp. pepper2 c. milk1 c. (8 oz.) shredded processed American cheese Melt butter or margarine.
