Egg scramble
Ingredients/Components
- milk - 2 c
- salt - 1/2 tsp
- flour - 2 Tbsp
- eggs, beaten - 12 item
- margarine - 1/2 c
- paprika - 1/8 tsp
- pepper - 1/8 tsp
- chopped onion - 1/4 c
- bread crumbs - 2 c
- shredded Cheddar cheese - 1 c
- sausage, cooked - 8 oz
- mushroom pieces - 4 oz
How to make egg scramble:
Melt 2 tablespoons butter in saucepan; remove from heat. Stir in flour, salt and pepper. Return to heat; add milk. Stir constantly over medium heat until mixture thickens. Add cheese and heat just until melted. Remove from heat and set aside.In large skillet, saute onion in 2 tablespoons butter. Stir in cooked sausage and beaten eggs. Scramble eggs just until set. Fold in mushrooms and cheese sauce. Pour mixture into a 13 x 9-inch dish. Melt 4 tablespoons butter; stir in bread crumbs and paprika. Sprinkle over egg mixture. Cover and refrigerate until ready to bake. Bake, uncovered, at 350° for 30 minutes. Makes 10 servings.
