Ingredients/Components

  • milk - 2 c
  • salt - 1/2 tsp
  • flour - 2 Tbsp
  • eggs, beaten - 12 item
  • margarine - 1/2 c
  • paprika - 1/8 tsp
  • pepper - 1/8 tsp
  • chopped onion - 1/4 c
  • bread crumbs - 2 c
  • shredded Cheddar cheese - 1 c
  • sausage, cooked - 8 oz
  • mushroom pieces - 4 oz

How to make egg scramble:

Melt 2 tablespoons butter in saucepan; remove from heat. Stir in flour, salt and pepper. Return to heat; add milk. Stir constantly over medium heat until mixture thickens. Add cheese and heat just until melted. Remove from heat and set aside.

In large skillet, saute onion in 2 tablespoons butter. Stir in cooked sausage and beaten eggs. Scramble eggs just until set. Fold in mushrooms and cheese sauce. Pour mixture into a 13 x 9-inch dish. Melt 4 tablespoons butter; stir in bread crumbs and paprika. Sprinkle over egg mixture. Cover and refrigerate until ready to bake. Bake, uncovered, at 350° for 30 minutes. Makes 10 servings.
