Enchiladas
Ingredients/Components
- American cheese, grated - 3 c
- onion, chopped fine - 1 item
- tortillas - 1 item
- chili of your choice - 1 item
How to make enchiladas:
Make chili of your choice. Remove some of the chili meat from the pot with a slotted spoon. Chop onion; set aside. Grate American cheese; set aside. Fill a 2-quart saucepan about 3/4 full of water, let come to a boil. Place tortillas, one at a time, in the hot water for 1 second. Keep water very hot.Place 1/4 teaspoon onion, 1 tablespoon chili and 1 tablespoon cheese on each tortilla and roll up. Place tortillas, seam side down, side by side in a Pyrex baking dish until dish is full. Pour about 1 cup chili juice over the enchiladas. Bake 10 to 12 minutes at 350°. Remove from oven and sprinkle with 1 1/2 cups cheese. Return to oven for 5 minutes. Serve immediately.
