Ingredients/Components

  • chopped mushrooms - 1 c
  • large onion - 1 item
  • large pepper - 1 item
  • cans of cream of mushroom soup - 3 item
  • Picante sauce - 2 c
  • enchilada mix
  • each or as much as you like
  • cooked chicken, chopped or turkey - 1 item

How to make enchiladas:

Saute over low heat onion, pepper and mushrooms. Add soups, Picante sauce and enchilada mix. Prepare your cooked chicken or turkey. Use large or medium flour tortillas. Spread a little of your sauce on tortilla; add some chopped up chicken or turkey and sprinkle with shredded cheese. Roll up. Lay into pan that has been sprayed with Pam or slightly greased. Pour enchilada sauce over all.
