Chicken breast diane



  • salt - 1/2 tsp
  • margarine - 2 Tbsp
  • Dijon mustard - 2 tsp
  • chicken broth - 1/4 c
  • black pepper - 1/4 tsp
  • chopped green onion - 3 Tbsp
  • juice of 1/2 lemon
  • large boneless chicken breasts - 4 item

How to make chicken breast diane:

Place chicken breasts between sheet of waxed paper and pound slightly. Sprinkle with salt and pepper. Heat 1 tablespoon each of oil and butter in large skillet. Cook chicken 4 minutes on each side. Do not overcook or they will be dry. Transfer to warm platter. Add green onion and lemon juice and mustard to skillet. Cook 15 seconds, whisking constantly. Whisk in broth. Stir until sauce is smooth. Whisk in remaining butter and oil. Pour sauce over chicken. Serve immediately.
