Ingredients/Components

  • eggs - 2 item
  • oregano - 1 item
  • Italian bread crumbs - 1 item
  • large eggplant - 1 item
  • small can Parmesan cheese - 1 item
  • salt, pepper and garlic salt - 1 item
  • large jar chunky peppers, mushroom spaghetti sauce or whatever kind you like - 1 item

How to make eggplant parmesan:

Peel and slice eggplant. Beat eggs, salt, pepper and garlic salt together with a fork. Dip eggplant into egg mixture and then bread crumbs and fry until brown. Drain well. Put in bottom of casserole dish.

Spoon spaghetti sauce over. Sprinkle with oregano and Parmesan cheese mixture. Place a slice of Mozzarella cheese over this. Continue to layer until all ingredients are used. Put remaining Mozzarella cheese on top. Bake in oven until cheese is melted throughout (either conventions or microwave). Serve hot.
