Easy potato soup
Ingredients/Components
- milk
- salt - 1 tsp
- butter - 1/2 c
- water - 1 qt
- oil - 2 Tbsp
- all-purpose flour - 3 Tbsp
- pepper - 1/4 tsp
- chopped onion - 1/2 c
- chopped celery - 1/2 c
- cubed potatoes about 1/2 inch cubes - 3 c
How to make easy potato soup:
In a large Dutch oven saut?© celery and onion in the oil for about 1-2 minutes or until the onions are tender. Don't brown them. Add the potatoes, water, butter, salt and pepper. Bring to a boil. Reduce the heat to medium high and cook until the potatoes are fork tender, not mushy.In a small bowl combine the flour with 1/2 c. milk. Whisk until smooth. Add to the soup mixture and stir. Add the remaining milk. Taste and adjust the seasonings, if needed. Keep warm until time to serve.
