  • half and half - 1 c
  • pkg - 1 oz
  • milk - 2 c
  • sour cream - 1 c
  • salt - 2 tsp
  • flour - 3/4 c
  • butter - 1/4 c
  • oil - 2 Tbsp
  • all-purpose flour
  • pepper - 1/2 tsp
  • chopped celery - 1 c
  • chicken broth - 6 c
  • bay leaf - 1 item
  • parsley - 1 Tbsp
  • garlic cloves, minced - 2 item
  • small bay leaf - 1 item
  • onion - 1/2 c
  • tarragon - 1 tsp
  • onions, finely chopped - 2 item
  • carrot, shredded - 1 item
  • large celery stalks, finely chopped - 2 item
  • small head cauliflower, cut up - 1 item
  • cans fat-free reduced sodium chicken broth - 4 oz
  • to 3 dried red chili peppers - 2 item

How to make cauliflower soup:

Wash the beans. Place in a large pot and cold water to cover. Let soak overnight. Or, boil the beans in 6 to 8 cups of water with a dash of baking soda for 2 minutes, then set aside for 1 hour.

Drain the beans and place them in a large pot. Add the chicken stock and bring to a boil. Reduce heat to low and simmer for 1 1/2 hours, adding more stock if necessary.

In another pan, melt the butter over moderate heat. Add the celery; cook for 5 minutes. Stir in the flour and cook, stirring constantly, for 1 minute.

Stir the vegetable mixture into the beans. Add the bay leaf, dried chili peppers and black pepper to taste. Cover and simmer over low heat for 2 to 3 hours. Check occasionally and add stock if the beans are not completely covered with liquid.

Remove and discard the bay leaf and chili pepper. Add salt and Tabasco sauce to taste. Puree the soup in a food processor or blender until smooth.
