Cream of spinach soup
Ingredients/Components
- milk - 2 c
- salt - 1/2 tsp
- flour - 1/3 c
- water - 1 c
- melted butter - 1/3 c
- pepper - 1/2 tsp
- clove garlic - 1 item
- onion - 1 item
- carrot - 1 item
- potato - 1 item
- spinach - 1 lb
How to make cream of spinach soup:
Steam until tender the carrot, onion, potato and garlic. Puree in own water. Steam spinach in 1 cup of water and then puree. Make a roux by whisking flour and butter. Keep stirring briskly and add 2 cups milk in mixture slowly. Cook over low heat, stirring until thickened. Add spinach puree to the roux, along with salt and pepper. Now add first mixture (carrots, etc.) to second. Stir until thick over low heat. Serves 4 to 6 people.Recipe categories: Lunch/snacks, Main dish, Bisques/cream soups.
