Cream of asparagus soup
Ingredients/Components
- chicken broth - 2 c
- fresh lemon juice - 1 Tbsp
- dash of cayenne pepper - 1 item
- green onions, thinly sliced - 2 item
- chopped fresh dill or 1 tsp - 1 Tbsp
- dash of freshly ground black pepper - 1 item
- asparagus stalks, trimmed and cut into 1/2-inch pieces - 1 lb
- buttermilk or low-fat plain yogurt - 1/2 c
How to make cream of asparagus soup:
Combine all ingredients, except buttermilk, in a 2-quart casserole. Cover tightly and cook on High for 8 to 10 minutes, or until the asparagus is tender. Pour into a food processor or blender and puree until smooth.Recipe categories: Lunch/snacks, Soups & stews, Bisques/cream soups.
