Ingredients/Components

  • chicken broth - 2 c
  • fresh lemon juice - 1 Tbsp
  • dash of cayenne pepper - 1 item
  • green onions, thinly sliced - 2 item
  • chopped fresh dill or 1 tsp - 1 Tbsp
  • dash of freshly ground black pepper - 1 item
  • asparagus stalks, trimmed and cut into 1/2-inch pieces - 1 lb
  • buttermilk or low-fat plain yogurt - 1/2 c

How to make cream of asparagus soup:

Combine all ingredients, except buttermilk, in a 2-quart casserole. Cover tightly and cook on High for 8 to 10 minutes, or until the asparagus is tender. Pour into a food processor or blender and puree until smooth.
