Ingredients/Components

  • milk - 1 c
  • salt - 1/2 tsp
  • butter - 1/2 c
  • egg, beaten - 1 item
  • pepper - 1/2 tsp
  • cloves garlic, minced - 2 item
  • can cream of celery soup - 1 3/4
  • minced parsley - 1/4 c
  • large onion, chopped - 1 item
  • Italian bread crumbs - 1/2 c
  • tomato soup - 4 Tbsp
  • minced green onions - 1/4 c
  • ribs celery, minced - 2 item
  • bell pepper, minced - 1/2 item
  • crawfish tails, cut up - 1 lb
  • pie crusts for 10-inch pie, not deep dish - 2 item

How to make crawfish pie:

Saute onions, garlic, pepper and celery in butter until limp. Add soup, tomato sauce, crawfish and parsley. Cook slowly for 10 minutes. Turn off heat and add breadcrumbs, salt and pepper and egg. Add milk and mix well. Add 1/2 mixture to uncooked pie shell and cover with other shell. Bake in 350° oven for 35 to 40 minutes.

Recipe is enough for 2 pies. Can freeze remaining mixture for another time.

Eliminate bread crumbs, egg, milk and pie crust to serve over rice or over croissant.
