Ingredients/Components

  • flour - 1/2 Tbsp
  • salt and pepper to taste - 1 item
  • medium onion, chopped fine - 1 item
  • parsley, chopped - 2 Tbsp
  • crawfish tails - 1 lb
  • bell pepper, chopped fine - 1 Tbsp
  • green onion tops, chopped - 1 item
  • to 1 1/2 sticks butter or oleo - 1 item
  • or 3 garlic pods, chopped fine - 2 item

How to make crawfish etouffee:

Melt butter or oleo in a skillet. Add flour and stir until blended. Add onions, bell pepper and garlic pods. Cook for 10 minutes. Cover and cook for another 15 to 20 minutes on low heat, stirring occasionally. Add salt, pepper and cayenne to taste, green onions and parsley and simmer a while, covered, until seasonings blend. Serve over rice.
