  • sugar - 2 c
  • cinnamon - 2 tsp
  • salt - 1 tsp
  • chopped nuts - 1 c
  • flour - 2 c
  • coconut - 1 c
  • soda - 2 tsp
  • grated carrots - 2 c
  • eggs, well beaten - 3 item
  • Wesson oil
  • crushed pineapple, drained - 1 c

How to make country carrot cake:

Mix eggs, sugar, flour, oil, soda and spices well. Fold in carrots, nuts, coconut and pineapple. Bake in a 10 x 15-inch pan at 350° for 45 to 50 minutes.

Frost with Country Carrot Cake Frosting.
