Carrot-pineapple cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 3 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- chopped nuts - 1 c
- flour
- butter - 1/4 c
- coconut - 1 c
- soda - 1 tsp
- grated carrots - 1 c
- buttermilk - 1/2 c
- corn syrup - 1 Tbsp
- canola oil
- small can crushed pineapple, drained - 1 item
How to make carrot-pineapple cake:
Glaze:1 c. sugar1 tsp. soda1/2 c. buttermilk1 Tbsp. corn syrup1/4 c. butter Place oil, eggs and sugar in a large bowl. Mix well. Add flour, soda, salt and cinnamon. Beat well. Add vanilla, nuts, carrots, pineapple and coconut. Bake at 350° in greased 9 x 13 pan for 40 to 50 minutes.Combine ingredients for glaze in saucepan and cook over low heat for 5 minutes. Spread over hot cake.
