Ingredients/Components

  • sugar - 2 c
  • cinnamon - 1 tsp
  • eggs - 3 item
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • chopped nuts - 1 c
  • flour
  • butter - 1/4 c
  • coconut - 1 c
  • soda - 1 tsp
  • grated carrots - 1 c
  • buttermilk - 1/2 c
  • corn syrup - 1 Tbsp
  • canola oil
  • small can crushed pineapple, drained - 1 item

How to make carrot-pineapple cake:

Glaze:1 c. sugar1 tsp. soda1/2 c. buttermilk1 Tbsp. corn syrup1/4 c. butter Place oil, eggs and sugar in a large bowl. Mix well. Add flour, soda, salt and cinnamon. Beat well. Add vanilla, nuts, carrots, pineapple and coconut. Bake at 350° in greased 9 x 13 pan for 40 to 50 minutes.

Combine ingredients for glaze in saucepan and cook over low heat for 5 minutes. Spread over hot cake.
