Ingredients/Components

  • sugar - 2 c
  • cinnamon - 2 tsp
  • vanilla - 1 tsp
  • pkg - 1 oz
  • salt - 1 tsp
  • chopped nuts - 1 c
  • flour - 2 c
  • coconut - 2 c
  • grated carrots - 2 c
  • baking soda - 2 tsp
  • box confectioners sugar - 1 item
  • walnuts - 1 c
  • Wesson oil
  • eggs, beaten well - 3 item
  • crushed pineapple undrained - 1 c
  • Frosting:1 stick butter

How to make carrot cake:

Frosting:1 stick butter1 box confectioners sugar1 tsp. vanilla1 (8 oz.) pkg. cream cheese, softened1 c. chopped nuts Mix together cake ingredients and pour into 9 x 15-inch or 9 x 13-inch pan. Bake at 350° for 40 to 45 minutes. Cool.

Frosting: Mix together butter, confectioners sugar, vanilla and cream cheese. Spread over cooled cake. Sprinkle on nuts.
