Ingredients/Components

  • milk - 1 c
  • salt - 3/4 tsp
  • butter - 2 Tbsp
  • plain flour - 2 Tbsp
  • pepper - 1/2 tsp
  • can whole kernel corn, drained - 1 item
  • chopped pimento - 1 tsp
  • can cream-style corn - 1 item
  • paprika for top - 1 item
  • beaten eggs measure eggs before beating - 1/2 c

How to make corn casserole:

Melt butter over low heat. Add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk and cook over medium heat until mixture is thickened and bubbly, stirring constantly. Remove from heat and stir in next 3 ingredients (eggs, salt and pepper). Add both cans of corn and pimento. Spoon into buttered baking dish and top with paprika. Fill metal cake pan with 1-inch of water and place casserole dish in this to bake. Bake at 350° for 45 minutes. Let stand to thicken after baking.
