  • milk - 2 c
  • salt - 1/4 tsp
  • flour - 1 Tbsp
  • butter - 1 Tbsp
  • pepper - 1/8 tsp
  • can whole kernel corn, drained - 1 item
  • chopped green onions - 1/4 c
  • can whole potatoes, drained - 1 item

How to make potato corn chowder:

Mash enough potatoes to equal 1/2 cup, then dice remaining potatoes; set both aside. In medium saucepan, melt butter; add green onions and fry 1 minute. Stir in flour, salt and pepper. Gradually add milk, stirring until smooth. Cook, stirring over medium heat until thickened. Stir in potatoes and corn. Cook 6 minutes until thick.
