Confetti scalloped potatoes
Ingredients/Components
- pkg - 16 oz
- oleo - 1/2 c
- chopped onion - 1/2 c
- shredded Cheddar cheese - 4 oz
- soup can milk - 1 item
- can mushroom soup - 1 item
- chopped pimiento - 2 Tbsp
- cracker crumbs, divided - 1 c
- small green pepper, cut in strips - 1 item
How to make confetti scalloped potatoes:
Melt butter. Saute onion. Stir in potatoes, soup and milk. Add cheese, green pepper, pimiento and 1/2 cup cracker crumbs. Pour into shallow casserole. Top with remaining cracker crumbs. Bake at 375° for 6 to 8 servings.Recipe categories: Side dish, Potato, Vegetables.
