Ingredients/Components

  • pkg - 16 oz
  • oleo - 1/2 c
  • chopped onion - 1/2 c
  • shredded Cheddar cheese - 4 oz
  • soup can milk - 1 item
  • can mushroom soup - 1 item
  • chopped pimiento - 2 Tbsp
  • cracker crumbs, divided - 1 c
  • small green pepper, cut in strips - 1 item

How to make confetti scalloped potatoes:

Melt butter. Saute onion. Stir in potatoes, soup and milk. Add cheese, green pepper, pimiento and 1/2 cup cracker crumbs. Pour into shallow casserole. Top with remaining cracker crumbs. Bake at 375° for 6 to 8 servings.
