Chicken scampi
Ingredients/Components
- salt - 1 tsp
- stick butter - 1/2 item
- pepper - 1/2 tsp
- grated Parmesan cheese - 1/4 c
- olive oil - 1/3 c
- linguine - 1 lb
- large onion, sliced - 1 item
- lemon, juiced - 1/2 item
- head broccoli, cut in bite size pieces - 1/2 item
- whole broiler-fryer chicken breasts, boned, skinned and cut in bite size pieces - 3 item
- large green pepper, cut in bite size pieces - 1 item
How to make chicken scampi:
In saucepan with salted water, place broccoli and steam 4 minutes. Boil linguine and drain. In large frypan, place butter and olive oil over medium heat. Add onion and pepper and saute 5 minutes. Remove from pan and reserve. To frypan, add chicken. Continue to cook, stirring about 5 minutes. Return onion and pepper to frypan. Add cooked broccoli and saute for 5 more minutes. Sprinkle with lemon juice, salt and pepper. Place linguine in serving dish, top with chicken vegetable mixture and sprinkle with cheese.Recipe categories: Chicken, Main dish, Poultry.
