Chicken cacciatore
Ingredients/Components
- salt - 1 tsp
- flour - 2 3
- chicken broth - 1/4 c
- bay leaf - 1 item
- dry white wine - 1/2 c
- basil - 1/2 tsp
- pepper to taste - 1 item
- tomato paste - 1/4 c
- minced garlic - 2 Tbsp
- sliced mushrooms - 1 c
- canola oil - 1 tsp
- chopped shallots - 1/4 c
- large boneless, skinless chicken breasts - 2 item
- brandy or sherry - 2 Tbsp
How to make chicken cacciatore:
Coat chicken with flour. Heat a frypan and rub with 1 teaspoon canola oil. Cook chicken until golden brown. Add remaining ingredients. Simmer, covered, for 1 hour. Serve with cooked pasta or rice. Serves 2.Recipe categories: Chicken, Main dish, Casseroles.
