Ingredients/Components

  • salt - 1 tsp
  • flour - 2 3
  • chicken broth - 1/4 c
  • bay leaf - 1 item
  • dry white wine - 1/2 c
  • basil - 1/2 tsp
  • pepper to taste - 1 item
  • tomato paste - 1/4 c
  • minced garlic - 2 Tbsp
  • sliced mushrooms - 1 c
  • canola oil - 1 tsp
  • chopped shallots - 1/4 c
  • large boneless, skinless chicken breasts - 2 item
  • brandy or sherry - 2 Tbsp

How to make chicken cacciatore:

Coat chicken with flour. Heat a frypan and rub with 1 teaspoon canola oil. Cook chicken until golden brown. Add remaining ingredients. Simmer, covered, for 1 hour. Serve with cooked pasta or rice. Serves 2.
