Chicken piccata
Ingredients/Components
- flour - 1/2 c
- butter - 2 Tbsp
- lemon juice - 2 Tbsp
- salt and pepper to taste - 1 item
- olive oil - 2 Tbsp
- chopped parsley - 2 Tbsp
- cloves garlic, crushed - 2 item
- dry sherry - 2 Tbsp
- green onions, chopped - 4 item
- chicken stock - 2 Tbsp
- yellow onion, peeled and chopped - 1 item
- thin lemon slices - 8 item
- chopped capers - 1 Tbsp
- boneless and skinless chicken breasts - 8 item
How to make chicken piccata:
Saute yellow onion, garlic and green onions in olive oil until just tender. Remove from pan and set aside.Spread some wax paper over the chicken breasts and pound them flat. Mix flour, salt and pepper together and place in a flat bowl. Dip the chicken into the flour mixture. Lightly brown them in butter, 2 to 3 minutes per side.
Add the sauteed onions and garlic. Over high heat, add the sherry, lemon juice and capers. This should be allowed to thicken to make a gravy for the chicken. Serves 8.
