Chicken cordon bleu
Ingredients/Components
- butter or margarine - 1/4 c
- carton sour cream - 1 oz
- egg, beaten - 1 item
- fine bread crumbs - 1/2 c
- minced fresh parsley - 3 Tbsp
- slices Swiss cheese - 8 item
- can cream of mushroom soup - 1 oz
- can sliced mushrooms, drained - 1 oz
- black pepper - 1/4 tsp
- dry sherry - 1/3 c
- chicken breasts, boned and skinned - 8 item
- slices Old Virginia ham - 8 item
How to make chicken cordon bleu:
Place chicken breast on waxed paper. Flatten to 1/4 inch thickness by using mallet or rolling pin. Place one slice ham and one slice of Swiss cheese in center of each chicken breast. Sprinkle evenly with parsley and pepper. Roll up lengthwise and secure with wooden picks. Dip each chicken breast into beaten egg; coat well with bread crumbs. Set aside. Melt butter in heavy skillet; brown chicken on all sides. Place chicken in 12 x 8 x 2-inch ovenproof baking dish, reserving drippings in skillet. Add mushroom soup, sour cream, sherry and sliced mushrooms to drippings and stir together well. Pour sauce over chicken. Bake uncovered at 350° for 40 to 45 minutes.Recipe categories: Chicken, Pork, Chicken breast.
