Chicken cordon bleu
Ingredients/Components
- salt - 3/4 tsp
- flour - 1/4 c
- water - 2 Tbsp
- vegetable oil - 3 Tbsp
- egg, beaten - 1 item
- pepper - 1/4 tsp
- dry bread crumbs - 1/2 c
- can cream of chicken or cream of mushroom soup - 1 item
- thin slices Swiss cheese - 4 item
- large chicken breasts or 4 boneless halves - 2 item
- thin slices ham red-eye is best - 4 item
How to make chicken cordon bleu:
Remove bones and skin from chicken. Cut breasts in half. Place chicken between plastic wrap and pound to 1/4 inch thick. Place one slice of ham and one slice of cheese on each piece of chicken. Roll up carefully and secure with wooden pick. Mix flour, salt and pepper. Coat the chicken rolls in flour mixture. Dip chicken roll in beaten egg and roll in bread crumbs.Heat oil over medium heat until hot. Brown chicken rolls. Cook about 10 minutes, turning once. Place chicken in Pyrex dish; cover with the soup that has been diluted with a little water. Cover and bake in a 350° oven about 30 minutes. Serve with herbed rice.
