Chicken cordon bleu
Ingredients/Components
- sour cream - 1 (8
- butter or oleo - 1/4 c
- egg, beaten - 1 item
- pepper - 1/4 tsp
- bread crumbs - 1/2 c
- slices Swiss cheese - 8 oz
- can sliced mushrooms, drained - 1 oz
- dry sherry - 1/3 c
- slices cooked ham - 8 oz
- fresh or dried parsley - 3 Tbsp
- can mushroom soup, undiluted - 1 item
- whole chicken breasts, split, boned and skinned - 4 item
How to make chicken cordon bleu:
Flatten each breast half to 1/4-inch thickness. Place one slice of ham and 1 slice cheese in center of each breast. Sprinkle parsley and pepper on each one. Roll up lengthwise and secure with toothpicks.Dip each chicken breast in egg, coat with bread crumbs. Melt butter in heavy skillet, brown chicken on all sides. Remove chicken to baking dish, reserving drippings in skillet. Add remaining ingredients to reserved drippings and stir well. Pour sauce over chicken. Bake, uncovered, at 350° for 40 to 45 minutes. Serves 8.
