Chicken cordon bleu

- sour cream - 1 (8
- butter - 1/4 c
- egg, beaten - 1 item
- pepper - 1/4 tsp
- bread crumbs - 1/2 c
- slices Swiss cheese - 8 item
- minced parsley - 3 Tbsp
- can mushrooms, drained - 1 oz
- slices cooked ham - 8 item
- can mushroom soup - 1 3/4
- cooking sherry - 1/3 c
- whole chicken breasts, split, boned and skinned - 4 item
How to make chicken cordon bleu:
Place each chicken breast half on a sheet of wax paper. Flatten to 1/4-inch thickness with mallet or rolling pin. Place one slice of ham and one slice of cheese in the center of each chicken piece. Sprinkle evenly with parsley and pepper. Roll lengthwise and secure with toothpicks. Dip each chicken breast in egg. Coat well with bread crumbs. Melt butter and brown chicken on all sides. Remove chicken to a 12 x 8 x 2-inch baking dish. Reserve drippings in skillet. Add remaining ingredients to reserved drippings and stir well. Pour sauce over chicken. Bake, uncovered, at 350° for 40 to 45 minutes.Recipe categories: Chicken, Pork, Chicken breast.
