Chicken cacciatore
Ingredients/Components
- flour - 1/2 c
- oil - 1/3 c
- hot water - 2 c
- clove garlic, minced - 1 item
- salt and pepper to taste - 1 item
- oregano - 1 tsp
- can tomato paste - 1 oz
- parsley - 1/2 c
- spaghetti - 1 item
- medium onion, chopped - 1 item
- thyme - 1/2 tsp
- can sliced black olives - 1 item
- white wine optional - 1/4 c
- frying chicken, cut into pieces - 1 (2
- sliced mushrooms fresh or 4 oz - 1/2 c
How to make chicken cacciatore:
Coat chicken with mixture of four, salt and pepper. Brown chicken in oil in a large, heavy skillet. Push chicken to the side and add onion, garlic and mushrooms. Cook and stir a few minutes.In a 1 1/2-quart saucepan, combine tomato paste with remaining ingredients, except wine and olives. Heat to boiling. Pour over chicken and stir well. Cover and simmer slowly for 45 minutes to 1 hour. Uncover. Add wine and olives. Simmer until sauce is of desired consistency. Serve with spaghetti and garlic bread. Serves 4 to 6.
