  • flour - 1/2 c
  • oil - 1/3 c
  • hot water - 2 c
  • clove garlic, minced - 1 item
  • salt and pepper to taste - 1 item
  • oregano - 1 tsp
  • can tomato paste - 1 oz
  • parsley - 1/2 c
  • spaghetti - 1 item
  • medium onion, chopped - 1 item
  • thyme - 1/2 tsp
  • can sliced black olives - 1 item
  • white wine optional - 1/4 c
  • frying chicken, cut into pieces - 1 (2
  • sliced mushrooms fresh or 4 oz - 1/2 c

How to make chicken cacciatore:

Coat chicken with mixture of four, salt and pepper. Brown chicken in oil in a large, heavy skillet. Push chicken to the side and add onion, garlic and mushrooms. Cook and stir a few minutes.

In a 1 1/2-quart saucepan, combine tomato paste with remaining ingredients, except wine and olives. Heat to boiling. Pour over chicken and stir well. Cover and simmer slowly for 45 minutes to 1 hour. Uncover. Add wine and olives. Simmer until sauce is of desired consistency. Serve with spaghetti and garlic bread. Serves 4 to 6.
