Chicken breast diane



  • salt - 1/2 tsp
  • oleo - 2 Tbsp
  • chicken broth - 1/4 c
  • olive oil - 2 Tbsp
  • chopped parsley - 3 Tbsp
  • black pepper - 1/2 tsp
  • boneless chicken breast halves - 4 item
  • Dijon style mustard - 2 tsp
  • juice of 1/2 lime or lemon
  • chopped fresh chives or green onions - 3 Tbsp

How to make chicken breast diane:

Place chicken breast halves between sheet of waxed paper or plastic wrap. Pound slightly with mallet. Sprinkle with salt and pepper. Heat 1 teaspoon each of oil and butter in large skillet. Cook chicken over high heat for 2 minutes on each side. Do not cook longer or they will be overcooked and dry. Transfer to warm serving platter.

Add chives or onions, lime juice (if used), parsley and mustard to pan. Cook 15 seconds, whisking constantly. Whisk in broth. Stir until sauce is smooth. Whisk in remaining butter and oil. Pour sauce over chicken.
