Chicken and cashews
Ingredients/Components
- cornstarch - 3 Tbsp
- oil - 3 Tbsp
- ginger - 1 tsp
- soy sauce - 4 Tbsp
- chicken broth - 3/4 c
- cashews - 3/4 c
- onions, chopped - 1/4 c
- hot peppers - 1/2 tsp
- dash of garlic - 1 item
- chicken breasts, deboned and cut into 1-inch pieces - 5 item
- large bunch broccoli use heads only - 1 item
How to make chicken and cashews:
Marinate chicken 1/2 hour in 1 tablespoon oil, 2 tablespoons soy sauce and 1 tablespoon cornstarch.Meantime, mix chicken broth, 2 tablespoons soy sauce and ginger; set aside.
In wok, cook chicken and hot peppers until no longer pink; remove. In wok, cook broccoli and 1/2 chicken broth mixture; cook until tender. Add chicken, cashews and dash of garlic. Add remaining chicken broth mixture. Serve over rice.
