Cauliflower mashed potatoes
Ingredients/Components
- salt - 3/4 tsp
- pepper - 1/4 tsp
- cauliflower
- grated cheddar cheese - 1/2 c
- yellow onion, finely chopped - 1 sm
- slices bacon fried then crumbled - 3 item
- sour cream low fat version works just as well - 3/4 c
How to make cauliflower mashed potatoes:
Cook the cauliflower until firm, yet tender. Coarsely mash cauliflower with potato masher. Add the sour cream, onion, cheese, salt and pepper. Mix well.Place in an 8x8-inch greased baking dish. Sprinkle with a bit more cheese and the bacon bits. Bake at 350° for 20 minutes. Makes 5-6 servings.
NOTE: This is a low carb recipe for people on the Atkin's diet. It is supposed to replace the cheesy potato recipe.
