  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • flour
  • oil
  • baking powder - 1 tsp
  • baking soda - 2 tsp
  • shredded carrots - 2 c
  • box powdered sugar - 1/2 3/4
  • pecans, chopped - 2 c
  • crushed pineapple, drained - 8 oz
  • Mix dry ingredients

How to make carrot cake:

Grease and flour 9 x 13-inch pan. Mix dry ingredients. Blend in egg. Mix pineapple and pecans. Bake at 350° for 50 to 60 minutes.Frosting:8 oz. cream cheese, softened1/2 c. butter, softened1 tsp. vanilla1/2 to 3/4 of 1 lb. box powdered sugar Blend ingredients together.
