- eggs - 4 item
- sugar - 2 c
- cooking oil
- flour
- soda - 2 tsp
- baking powder - 2 tsp
- salt - 1 tsp
- cinnamon - 2 tsp
- grated carrots - 2 c
- flaked coconut - 2 c
- can crushed pineapple with juice - 1 item
- chopped walnuts - 1/2 c
- cream cheese
- stick butter - 1/4 item
- vanilla - 1 tsp
- powdered sugar - 3 c
How to make carrot cake:
Icing:8 oz. cream cheese1/4 stick butter1 tsp. vanilla3 c. powdered sugar Beat eggs until fluffy. Add sugar and oil; mix until creamy. Sift together next 5 ingredients 3 times. Add to batter. Add carrots, coconut, pineapple (including juice), then nuts; beat well. Bake at 350° for 50 minutes in a 9 x 13-inch pan.Prepare Icing: Mix package of cream cheese and butter until blended, then add vanilla and powdered sugar. Beat until smooth.
