Caramel popcorn



  • vanilla - 1 tsp
  • salt - 1 tsp
  • baking soda - 1/2 tsp
  • light corn syrup - 1/2 c
  • butter or oleo - 1 c
  • light brown sugar, firmly packed - 2 c
  • unpopped popcorn - 1 c

How to make caramel popcorn:

Pop popcorn in air popper. Yields 5 to 6 quarts popped corn. Place in large bowl. Combine butter, sugar, syrup and salt in heavy saucepan. Heat and stir over medium heat until boiling. Then boil without stirring for 5 minutes. Remove from heat. Stir in vanilla and soda. Pour over popcorn and toss well until all pieces are coated. Spread on 2 large ungreased shallow pans. Bake in 250° oven for 1 hour, stirring every 15 minutes. Cool completely. Break apart and store in airtight containers.
