Blueberry muffins

Blueberry muffins



  • sugar
  • eggs - 2 item
  • milk - 1/2 c
  • salt - 1/2 tsp
  • flour - 2 c
  • baking powder - 2 tsp
  • margarine - 1/2 c
  • blueberries, washed - 1 pt

How to make blueberry muffins:

Cream margarine and sugar. Add eggs, one at a time. Sift flour, salt and baking powder. Add to first mixture. Add milk. Fold in blueberries. Grease and fill 3-inch muffin tins full. Sprinkle with mixture of sugar and cinnamon. Bake 30 minutes in 350° oven. Test with toothpick at 25 minutes. Makes 12 large muffins. They freeze well.
