Bean and cheese quesadillas
Ingredients/Components
- large tomato, chopped - 1 item
- grated Cheddar or Monterey Jack cheese - 2 c
- small flour tortillas - 8 item
- refried beans or black beans - 1 c
How to make bean and cheese quesadillas:
Spread refried beans evenly over 4 flour tortillas. Sprinkle 1/2 cup cheese on each tortilla over beans. Layer chopped tomato over cheese. Place remaining flour tortillas on top. Wrap each in foil and bake at 350° for 10 to 15 minutes until cheese is melted. Cut into quarters and serve.Recipe categories: Lunch/snacks, Appetizers, Cheese.
