Ingredients/Components

  • sugar - 1/4 c
  • eggs, beaten - 2 item
  • soft bread crumbs - 1 c
  • salt to taste - 1 item
  • generous dash of pepper - 1 item
  • stick butter/margarine - 1 item
  • yellow squash about 10 - 5 lb
  • chopped onions or to taste - 2 Tbsp

How to make baked squash:

Cut squash into large pieces. Boil until tender; drain and mash (leaving some chunks). Mix with remaining ingredients and pour into 3-quart casserole dish. Add additional buttered bread crumbs on top and bake in preheated 350° oven for 30 to 60 minutes or until lightly browned. Serves 10.

Variations: Add 1 to 1 1/2 cups Cheddar cheese and 1 diced jalapeno pepper. Adds a little zip.
