Ingredients/Components

  • flour - 1 item
  • butter, melted - 6 Tbsp
  • Worcestershire sauce - 1 Tbsp
  • salt and pepper - 1 item
  • parsley - 1 item
  • clove garlic, minced or pressed - 1 item
  • lemon wedges - 1 item
  • large onion, minced - 1 item
  • canned tomatoes, drained - 2 tomatoes,
  • salmon whole or piece, scaled and fins removed - 1 (5
  • approximately light cream - 1/4 c
  • butter and 1 Tbsp

How to make baked salmon:

Rub the salmon inside and out with salt and pepper; dredge with flour. Put into a well-greased narrow baking pan. Bake in a preheated 425° oven for 15 minutes, then add the butter, onion, garlic, Worcestershire sauce and tomatoes. Reduce heat to 375°. Bake for 30 minutes longer, basting frequently.

A meat thermometer, inserted into the thickest part of the fish, should reach 160°. Remove fish to a hot platter and keep warm. Add a little cream, about 1/4 cup, to the sauce in the pan and stir well until smooth. If sauce is too thin, thicken with beurre manie. Garnish the fish with lemon wedges and parsley. Serve the sauce in a separate dish. Serves 6.
